Roasted Garlic Soup

- salt and pepper
- new or purple potatoes, or a mixture
- fresh rosemary
- yellow onions
- fresh thyme
- chicken stock (vegetable stock will also work)
- Greek yogurt, milk, or half and half, or heavy cream
- lemon wedges
